In theory, the nut, fretboard and saddle should all have approximately the same radius, save for small action adjustments of course.

The general method for setting up acoustic saddles would be to get the curvature of the top edge right (ideally a slight parabolic curve to give the thicker strings slightly more height) then take material off the bottom to get the overall height correct.

I wouldn't get too hung up on getting the 12th fret action EXACTLY spot on- there is no real 'standard' action- some people like it really low, and some quite high. As long as it's comfortable, doesn't buzz, and plays in tune then you're sorted
