I was browsing through Ebay listings earlier and found one for a 50W head and 120W cabinet. Does that make it a 50W system?

Yep, when looking at cabinets, the quoted wattage basically means what the cabinet can handle.

So:

50w Head / 120w Cabinet = 50w
120w Head / 120w Cabinet = 120w
120w Head / 50w Cabinet = 120w but danger of speaker damage

Yes it might be interesting to note that Hiwatt sell a 400w cab to match their 50w Valve and 100w SS amps. I prefer to run at least double the output of the amp in terms of speaker handing, though my Roost 120w Valve and modded 800w cab might be overkill in some situations.

I've destroyed enough speakers over the years to convince me that speakers should always be rated higher than the amp that's driving them.

So yes, that's a 50W system.

Just an afterthought about why you always go over on the rating. All amps, but especially valve amps, go over their rating. Reason being that the rating is assessed at the point of audible overdrive breakup. Most valve amps go well beyond that so can peak at somewhere around 100w on a 50w system. So a 120w cab is right to give a bit of safety margin. (and probably has 4 30w speakers in as favoured by many guitarists)
