Beware of the finish-stripping idea, I made that mistake a while ago with a guitar - a lot of more recent Guitars have a polyester finish - this stuff is impervious to even powerful paint finishes, and gives off very nasty fumes if you try to use a heat gun. And depending on the guitar, you may indeed be dissapointed by what you find underneath - I was! the body appeared to be something like 6 pieces of wood, with veneers of some sort of rubbish soft wood top and bottom, presumably to help give a smooth surface for finishing over. A nightmare really, a lot easier starting with a fresh guitar body frankly.
This is just my experience with one guitar, but think carefully is all I'm saying!

I wish I could do this challenge...but zero money. Looks like a good project. A bit of a stone roses vibe with the old jackson pollock motif. Your strat will look a bit like my old Tokai then? I love the blackout strats. What are you doing with the old neck? 
I'm going through a silly stage of trying out body ideas. Basically rethinking materials for bodies, the obvious one is old chopping blocks, but then there's biscuit tins (for a resonator sound), plastic moulded cases...in fact anything that you can stick a block of wood through and screw some pickups to. I will create something that sounds great...eventually. After my bass build...nearly finished, will post pics (quite pleased so far).... My next job is an acoustic upon which I am painting about 100 penguins...can't wait. Then a friend wanted me to make his old tanglewood look like a Buck owens (red,white and blue). Finally, by the end of the year I want to have a crack at the fibre-glass body moulding...a la airline/eastwood. Plus more custom artwork.
Have you thought about a relic or road worn finish? Would look nice on a black strat. Or chrome pickup covers and knobs. I shall watch with interest sticky. Good luck.

The Gilmour black strat idea sounds great to me - if you can get that guitar nailed for less than £100 that will be impressive. Somehow I think you can do it though!
