Thanks to everyone for all the help - I've kept links to all the websites mentioned for future reference as well. For the moment, I'm going to make myself some cables up using stuff from audiospares, this wire: http://www.audiospares.com/product.php?productid=2084&cat=489&page=1 - it's described as "low capacitance" without giving a figure, but I imagine it's not bad - I'm unlikely to use massive long runs anyway, and I do take the point about tweaking the treble on the amp - so it should be fine for me.
And probably just some reasonable but inexpensive jack plugs, maybe something like this: http://www.audiospares.com/product.php?productid=2077&cat=622&page=1 - not the most expensive Neutrik plugs, but I don't exactly live the rock n roll touring lifestyle, and I look after my gear carefully, I think they will be fine for my requirements.
